Muesli is one of my favourite breakfasts. Its basically a mixture of oats, nuts, seeds, dried fruits soaked overnight in milk or yogurt (or a combination of two) with some shredded apples, maple syrup/ honey or orange juice.

I love a cold bowl of muesli first thing in the mornings especially during summers. Its a great way to cool off and an easy breakfast that you can make ahead of time to enjoy a leisurely morning. I also love the versatility of muesli which can be made with any combination and topped with fresh fruits, compote, nut butters, jams or all if you are not counting the calories.

I stewed some apples with raisins, cinnamon and honey to add a little bite my muesli. It was indulgent but healthy.

 

INGREDIENTS

1/4 cup of rolled oats

1/2 cup yogurt

1/4 cup milk

2 tablespoon maple syrup

1 tsp cinnamon

1/4 cup shredded apples

Pinch of salt

1 tablespoon butter

1 apple- peeled and cubed

handful of raisins

2 tablespoon honey

1 tsp cinnamon

 

PREPARATION

1. Stir oats, cinnamon and salt in a bowl (you can use the one you are going to eat in)

2. Add yogurt, milk, maple syrup and apples. Store it well.

3. Cover the container and store overnight in the refrigerator.

4. The oat milk can be kept up to a week in the refrigerator.

5. Cook the apples with butter, raisins, honey and cinnamon in a pan on low heat.

6. Add the apple raisin compote over your bowl of muesli. Enjoy!
