This spicy beetroot dip will be the show stopper at your next party with its bright color and sharp, earthy flavors. It can be served along side slices of toasted bread, grilled pita, crackers or even paired with a soft goat’s cheese.. It’s as easy as whipping up hummus but a lovely way to mix things up once in a while. And the biggest bonus: it’s healthy! We partnered with the lovely folks at Epigamia to create a series on easy entertaining where we used their delicious greek yogurt to create recipes that are healthy, fun and super simple.
I truly feel that beets are one of the most versatile vegetables we have around: it can be steamed, fried, baked, boiled or pureed. Plus it’s rich in antioxidants and vitamin C and has a subtle, sweet flavor that is hard to beat. I roasted 3 beets, sliced them and then threw it in the food processor along with 2 tbsp of our spicy garlic mustard relish,1 cup plain greek yogurt for creaminess and half a spring onion for a little crunch. Whir it together for around two-three minutes and there you have it!
A gorgeously bright colored dip with great flavor and texture. Add some toasted chopped almonds on top along with a few sprigs of spring onion to provide some crunch and serve it in a bowl or spread it over slices of toast and pass it around for your guests to enjoy. Epigamia’s natural greek yogurt is thick and creamy making this dip luscious without it being too heavy and our garlic mustard relish gives it heat and depth of flavor and you get to skip salt, garlic, chillies in lieu of just 1 tbsp of our spicy relish. If you have leftovers the next day (though we highly doubt it), add it to a sandwich or a couple of tablespoons loosened with olive oil to a big bowl of salad for a wonderful kick.
