I am convinced that nothing tastes better than a slice of pie with flaky crust and jam like fruit filling under a dollop of whipped cream or ice cream. You can eat it warm after dinner or as breakfast straight from the fridge and pretend you had a balanced meal because fruit and carbs, am I right?
Its hard to beat pie but if you are running short on time or patience then galette is going to be your best friend. Galette is the friendlier sibling of the pie simply because it’s not as fussy. There is no crimping, pre baking or fear that it might shrink.There is no need for perfection. You simply roll out the dough, layer your fillings and fold over the edges . It’s rustic, elegant and a lazy person’s best friend. I always use a pate brisee and make extra to hide in the freezer in case of pie related emergencies.
Plums are everywhere right now (plus they are one of my favourite things to eat on this planet!) and I decided to pair them with almonds to make an easy dessert for watching Game of Thrones(is this show getting a bit cheesy or is it just me?) at a friend’s place tonight. Luckily for me, I found a recipe that was almost exactly what I had in mind. I swapped the thyme with rosemary because that’s what I had on hand, added orange zest to the plums because why not and topped it with sliced almonds for a little extra crunch.
Despite having a busy day at work, I managed to make this baby in under two hours from start to finish. It looked grand and tasted even better. In fact, I am convinced that I need to introduce pies/tarts/galettes to our shop! I think it makes for a great gift to take to someone’s house for dinner or when you need to bring a dessert. In the meanwhile, you should definitely make this for dessert in your own kitchen.
