It feels like I blinked and its festive season again. We have been really busy with recipe testing for our menu (coming soon!), designing new, really good gift boxes and training our ever expanding team. It has also been fun putting together gift boxes for Rakhi filled with a variety of goodies, perfect for different tastes and preferences. Cookies are really popular and we have a range of flavours to choose from like salted chocolate chip, oatmeal raisin, peanut butter, pistachio shortbread and lemon thyme to name a few. I thought I will share one of my favourites here for you to give it a go in your own kitchen.
Linzer cookies are pretty sandwich cookies with a rich, nutty crumb and a sweet jam filling. They are perfect for holiday gifting as they look beautiful and festive, making them really popular around the world especially during Christmas. They are adapted from Linzertorte that originated in Linz, Austria which has a short pastry crust with ground almonds and a jam filling. This is a cookie version of the tart and has a wonderful nutty flavour offset by the sweetness of the jam. Ground almonds are used in the dough to give it a depth of flavour and baked after cutting them out in pretty shapes. There are hundreds of wonderful recipes out there and this one is a great starting off point. The key is to get the balance right between the sweetness of the cookie and the tartness of the jam. And our spiced plum jam was a great choice to sandwich between the cookies.It is both sweet and tart with a hint of cinnamon hanging in the back to add just the right amount of warmth to it.
Paired with the nutty, buttery cookies, it tasted perfect. In the kitchen, we polished off a dozen cookies during coffee break. Give this a go and you will be really happy with the results. And if you have any leftover (i doubt it) pack them in a box and surprise someone with this great gift.
