You guys, this summer has been long, hot and way too humid for us to handle. Needless to say we were ecstatic when it finally started raining here in Mumbai, and decided to celebrate by creating something fun in the kitchen. There were a few tubs of ice cream sitting in our freezer since we consumed way too many pints this summer and decided to make some ice cream sandwiches for a mid day snack.
There is nothing more fun that squishing a scoop of ice cream between two cookies and we did precisely that with Hokey Pokey Very Berry ice cream and our delicious salted chocolate chip cookies since we had baked a fresh batch for an order. Best. Decision. Ever. The combination of strawberries and chocolate paired with sea salt was both delicious and interesting. The ice cream is pretty luscious and sandwiched between gooey cookies, it took all our restraint not to demolish them in one sitting. The brightness of the strawberry ice cream paired with the richness of the gooey chocolate cookie was downright indulgent and a little naughty.There is really no recipe here. It’s so simple that even a five year old could do it. In fact, get your kids or younger siblings to assemble this and watch them take a bite excitedly, filled with pride at their delicious creation. Just choose flavors you love and basically pile a scoop of your favorite ice cream on a cookie and top it with another cookie pushing it down so that the ice cream squished into the shape of the cookie. Place it on a parchment lined plate and plop it in the freezer for about an hour. Pull it out and eat it immediately. Like we have to tell you twice.
